- 1 large head of cauliflower
- ⅓ cup olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup fresh parsley leaves
- ½ cup fresh cilantro leaves
- 4 garlic cloves
- 1 teaspoon red pepper flakes (optional)
- ¼ cup red wine vinegar
- Juice of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Remove the leaves from the cauliflower and trim the stem to create a flat base.
- Slice the cauliflower into ¾-inch thick “steaks.” You should get about 3 to 4 large steaks from one head.
- Place the cauliflower steaks on a baking sheet and brush both sides with olive oil. Season with salt and black pepper.
- Roast in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden and tender.
- While the cauliflower is roasting, prepare the chimichurri sauce. In a food processor, combine the parsley, cilantro, garlic, red pepper flakes, red wine vinegar, lemon juice, and a pinch of salt. Drizzle in the olive oil and pulse until well combined.
- Once the cauliflower steaks are done roasting, remove them from the oven and drizzle generously with the chimichurri sauce. Serve warm and enjoy!

Ensure even slices for consistent cooking. Let chimichurri sit for 10 minutes to enhance flavors.
