- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt

- 2 tbsp unsalted butter, melted
- 2 tbsp lemon zest (from about 2 lemons)
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 cup powdered sugar
- 2–3 tbsp fresh lemon juice
- 1/2 tsp lemon zest (optional, for garnish)
Instructions
- Start by preheating your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large mixing bowl, whisk the eggs, granulated sugar, sour cream (or Greek yogurt), vegetable oil, and melted butter together until smooth.
- Stir in the lemon zest, fresh lemon juice, vanilla extract, and lemon extract to create a flavorful mixture.
- Gradually add your dry ingredient mixture to the wet ingredients, stirring gently until just combined.
- Pour the batter into the greased loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, checking for doneness with a toothpick.
- Once baked, let the loaf cool in the pan for about 10 minutes before transferring to a wire rack.
- In a small bowl, whisk powdered sugar with 2-3 tablespoons of lemon juice until smooth to make the glaze.
- Drizzle the glaze over the cooled loaf and garnish with lemon zest if desired.
Notes
For best results, use fresh lemons and ensure your ingredients are at room temperature.
