Description

Ingredients

  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice
  • 1/2 tsp lemon zest (optional, for garnish)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large mixing bowl, whisk the eggs, granulated sugar, sour cream (or Greek yogurt), vegetable oil, and melted butter together until smooth.
  4. Stir in the lemon zest, fresh lemon juice, vanilla extract, and lemon extract to create a flavorful mixture.
  5. Gradually add your dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the greased loaf pan and smooth the top with a spatula.
  7. Bake for 45-50 minutes, checking for doneness with a toothpick.
  8. Once baked, let the loaf cool in the pan for about 10 minutes before transferring to a wire rack.
  9. In a small bowl, whisk powdered sugar with 2-3 tablespoons of lemon juice until smooth to make the glaze.
  10. Drizzle the glaze over the cooled loaf and garnish with lemon zest if desired.
