- 4 large potatoes, peeled and cubed
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter
- Salt and pepper to taste
- Chopped fresh chives for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well.
- In a large mixing bowl, combine the heavy cream, sour cream, cheddar cheese, Parmesan cheese, and butter. Stir until the butter is melted and the mixture is smooth.
- Add the drained potatoes to the cream mixture and gently fold to combine.
- Season with salt and pepper to taste.
- Transfer the mixture into a greased baking dish.
- Bake in the preheated oven for about 25-30 minutes until bubbly and lightly golden on top.
- Garnish with chopped chives before serving.
Notes
For a crispy topping, sprinkle additional cheese or breadcrumbs on top before baking. You can also add cooked bacon or diced ham for a meaty twist.
