Description

A quick and easy dish packed with vibrant Mediterranean flavors, featuring chicken, rice, and tzatziki sauce.


Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 2 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute (diced zucchini or bell pepper)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the long-grain white rice and chicken broth. Stir until evenly distributed.
  3. Place the boneless chicken breasts on top of the rice mixture. Drizzle olive oil over the chicken, then sprinkle with salt, black pepper, and paprika.
  4. Cover the dish with foil and bake in the preheated oven for 30 minutes.
  5. While chicken and rice are baking, mix together Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, and oregano in a bowl for your tzatziki sauce.
  6. After 30 minutes, remove the foil and check the chicken’s internal temperature. Bake for an additional 15-20 minutes until the chicken is cooked through.
  7. Let the chicken rest before slicing, then serve over the rice and top with tzatziki sauce.

Notes

Make the tzatziki sauce ahead of time for better flavor melding. For a spicy twist, add red pepper flakes.
