- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (diced zucchini or bell pepper)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the long-grain white rice and chicken broth. Stir until evenly distributed.
- Place the boneless chicken breasts on top of the rice mixture. Drizzle olive oil over the chicken, then sprinkle with salt, black pepper, and paprika.
- Cover the dish with foil and bake in the preheated oven for 30 minutes.
- While chicken and rice are baking, mix together Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, and oregano in a bowl for your tzatziki sauce.
- After 30 minutes, remove the foil and check the chicken’s internal temperature. Bake for an additional 15-20 minutes until the chicken is cooked through.
- Let the chicken rest before slicing, then serve over the rice and top with tzatziki sauce.
Notes
Make the tzatziki sauce ahead of time for better flavor melding. For a spicy twist, add red pepper flakes.
