Quick and flavorful BBQ Chicken Quesadillas loaded with shredded chicken, cheese, and zesty BBQ sauce, perfect for lunch or dinner.

- 8 flour tortillas (8–10 inch size)
- 2 cups shredded chicken
- 1 and 1/2 cups shredded Monterey Jack cheese
- 1/2 cup BBQ sauce
- 1/2 cup red onion, thinly sliced
- 1/3 cup cilantro, chopped
Instructions
- Combine the shredded chicken with BBQ sauce in a mixing bowl.
- Heat a sauté pan over medium-high heat and place one tortilla in the pan.
- Layer with cheese, BBQ chicken mixture, onions, cilantro, and more cheese. Top with another tortilla.
- Cook until golden brown on both sides, flipping carefully.
- Cut the quesadilla into 4-6 slices and serve immediately with extra BBQ sauce.
Notes
Use leftover chicken for convenience; don’t skimp on the cheese for best results.
