- 200g spaghetti
- 150g cooked chicken, shredded
- 100g pancetta or bacon, diced
- 2 large eggs
- 50g grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parsley for garnish
Instructions
- Cook spaghetti according to package instructions.
- In a pan, cook pancetta or bacon until crispy. Add garlic and sauté for a minute.
- In a bowl, whisk eggs and mix in Parmesan cheese, salt, and pepper.
- Drain pasta and add it to the pan with bacon. Off the heat, quickly add egg mixture, stirring until creamy.
- Stir in shredded chicken and garnish with parsley. Serve immediately.
Notes
Make sure to add the egg mixture off the heat to avoid scrambling the eggs. Use leftover rotisserie chicken to save time.
