Ingredients

- 2 tablespoons olive oil
- 4 chicken thighs, bone-in and skin-on
- 1 onion, chopped
- 2 carrots, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 can (15 oz) white beans, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt and pepper, then add to the pot. Brown on both sides (about 5 minutes per side). Remove and set aside.
- In the same pot, add onion and carrots. Cook until softened (about 5 minutes).
- Stir in garlic and cook for another minute.
- Add diced tomatoes, chicken broth, white beans, thyme, and paprika. Bring to a simmer.
- Return chicken to the pot, cover, and reduce to low heat. Cook for 30-40 minutes until chicken is cooked through.
- Taste and adjust seasoning.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, consider marinating the chicken in herbs or spices before cooking. You can also add other vegetables or replace chicken with portobello mushrooms for a vegetarian version.
