Description

A delightful dessert that captures the spirit of Christmas with its soft chocolatey rolled cake filled with whipped cream and covered in rich chocolate frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • 2 tbsp powdered sugar
  • 1/2 cup chocolate frosting
  • Chocolate shavings for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until combined.
  5. Pour the batter into the prepared pan, spreading it evenly.
  6. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  7. Remove from the oven and let cool for a few minutes, then invert onto a clean kitchen towel dusted with powdered sugar.
  8. Roll the cake gently in the towel from the short end and let it cool completely.
  9. Meanwhile, whip heavy cream and powdered sugar until stiff peaks form.
  10. Unroll the cooled cake, spread chocolate frosting evenly on it, then layer whipped cream over the frosting.
  11. Roll the cake back up carefully, seam side down, and trim the ends if needed.
  12. Frost the outside with remaining chocolate frosting and decorate with chocolate shavings.
  13. Chill in the refrigerator until serving.

Notes

For a different flavor, try using coffee extract instead of vanilla or add crushed peppermint candies to the whipped cream for a festive touch.
