- 1 cup rice
- 2 cups beef broth
- 1 cup bell peppers, diced
- 1 cup onions, diced
- 1 cup corn (frozen or fresh)
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add onions and garlic; sauté until soft.
- Add ground beef, cooking until browned. Drain excess fat if necessary.
- Stir in bell peppers, corn, and spices. Cook for about 5 minutes.
- Add rice and beef broth; bring to a simmer.
- Cover and cook for 20 minutes or until rice is tender.
- Fluff with a fork and serve warm.
Notes
Use lean ground beef for a lighter dish. You can customize with different vegetables or substitute ground beef for turkey or chicken.
