Description

A quick and filling one-skillet meal perfect for busy weeknights. This ground beef and rice recipe is affordable and delicious.


Ingredients

  • 1 lb lean ground beef
  • 1 cup rice
  • 2 cups beef broth
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 1 cup corn (frozen or fresh)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium heat. Add onions and garlic; sauté until soft.
  2. Add ground beef, cooking until browned. Drain excess fat if necessary.
  3. Stir in bell peppers, corn, and spices. Cook for about 5 minutes.
  4. Add rice and beef broth; bring to a simmer.
  5. Cover and cook for 20 minutes or until rice is tender.
  6. Fluff with a fork and serve warm.

Notes

Use lean ground beef for a lighter dish. You can customize with different vegetables or substitute ground beef for turkey or chicken.
