- 1 cup corn kernels (fresh or canned)
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1/2 cup milk
- Oil for frying
Instructions
- In a large bowl, combine the corn, flour, baking powder, sugar, salt, and pepper.
- In a separate bowl, whisk together the egg and milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
- Remove and drain on paper towels.
- Serve warm, optionally with applesauce or syrup.
