- 2 pounds of small potatoes (e.g., baby potatoes)
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and halve the potatoes.
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Toss the potatoes in the mixture until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Sprinkle grated Parmesan cheese over the potatoes.
- Roast in the preheated oven for 25-30 minutes or until golden brown and tender, turning halfway through.
- Garnish with fresh parsley if desired and serve warm.
Notes
For extra crunch, try broiling them for the last few minutes of cooking. Adjust seasonings to your taste by adding herbs like rosemary or thyme.
