Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add the diced potatoes and broth, bringing to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth (or leave some chunks for texture).
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with cheese if desired.

Make sure to dice your potatoes evenly for even cooking. You can enhance the flavor by adding garlic or herbs like thyme or rosemary during the cooking process.
