- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the pumpkin puree, sugar, brown sugar, and butter until smooth.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the chocolate chips if using.
- Drop spoonfuls of dough onto a greased baking sheet.
- Bake for 10-12 minutes or until lightly browned.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
