Description

These soft and moist pumpkin muffins are filled with warm spices, perfect for any season, especially fall.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. <liGradually mix the dry ingredients into the wet ingredients until just combined.

  5. Fill the muffin cups about 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool before serving.
