- 2 cups pumpkin puree
- 1 cup vegetable broth
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- Pumpkin seeds for garnish (optional)
Instructions
- In a crockpot, combine the pumpkin puree, vegetable broth, coconut milk, chopped onion, minced garlic, ginger, cinnamon, salt, and pepper.
- Stir well to mix all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, blend the soup until smooth using an immersion blender.
- Serve hot, garnished with pumpkin seeds if desired.
Notes
For extra flavor, sauté the onion and garlic in olive oil before adding them to the crockpot. You can use fresh pumpkin instead of puree.
