Description

A quick and homey dessert that features bright cherries with a buttery, oat-filled crumble.


Ingredients

Scale
  • 2 cups cherries, pitted and halved
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Combine flour, oats, brown sugar, cinnamon, and salt in a mixing bowl. Add melted butter and mix until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish.
  4. Mix the cherries with granulated sugar, lemon juice, and vanilla extract in another bowl.
  5. Spread the cherry mixture over the crust in the baking dish.
  6. Crumble the remaining oat mixture over the top of the cherries.
  7. Bake for 25-30 minutes or until golden.
  8. Allow to cool before cutting into bars and serving.

Notes

For best results, chill the baked bars for cleaner slicing. Use parchment in the pan for easy removal.
