Description

A simple, wholesome, and festive cake that is perfect for holiday gatherings and suitable for vegans.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1 cup almond milk (or other plant-based milk)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts (optional)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
  2. In a mixing bowl, combine the flour, brown sugar, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together the applesauce, vegetable oil, and almond milk.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the raisins and walnuts if using.
  6. Pour the batter into the prepared cake pan.
  7. Bake in the preheated oven for about 30-35 minutes, or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

Serve with powdered sugar or vegan frosting. Pairs well with tea or coffee.
