Description

A healthy and filling soup made with fresh vegetables and packed with nutrients, perfect for any day.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. In a slow cooker, heat olive oil and sauté onion, carrots, and celery until softened.
  2. Add garlic and cook for another minute.
  3. Add zucchini, bell pepper, vegetable broth, diced tomatoes, oregano, thyme, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. In the last 30 minutes of cooking, add fresh spinach. Serve warm.
