Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
- In a slow cooker, heat olive oil and sauté onion, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Add zucchini, bell pepper, vegetable broth, diced tomatoes, oregano, thyme, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes of cooking, add fresh spinach. Serve warm.
