This easy Whole30 jalapeño buffalo chicken casserole is a flavorful, healthy meal following Whole30 guidelines, perfect for busy weeknights.

- 2 cups cooked chicken, shredded
- 1 cup cauliflower rice
- 1 cup canned coconut milk (full-fat)
- 1 cup buffalo sauce (Whole30 compliant)
- 1 cup diced jalapeños
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups broccoli florets
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, sauté the diced onion and minced garlic until the onion becomes translucent.
- Add the shredded chicken, cauliflower rice, diced jalapeños, broccoli florets, and buffalo sauce to the skillet. Stir until everything is well combined.
- Pour in the coconut milk and mix until the sauce is evenly distributed. Season with salt and pepper to taste.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Bake in the preheated oven for 25-30 minutes or until the casserole is bubbling and the broccoli is tender.
- Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro, if desired.
Notes
For a milder dish, reduce the number of jalapeños or use less buffalo sauce. Feel free to add other vegetables for added nutrition.
