Description

This easy Whole30 jalapeño buffalo chicken casserole is a flavorful, healthy meal following Whole30 guidelines, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower rice
  • 1 cup canned coconut milk (full-fat)
  • 1 cup buffalo sauce (Whole30 compliant)
  • 1 cup diced jalapeños
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the diced onion and minced garlic until the onion becomes translucent.
  3. Add the shredded chicken, cauliflower rice, diced jalapeños, broccoli florets, and buffalo sauce to the skillet. Stir until everything is well combined.
  4. Pour in the coconut milk and mix until the sauce is evenly distributed. Season with salt and pepper to taste.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbling and the broccoli is tender.
  7. Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro, if desired.

Notes

For a milder dish, reduce the number of jalapeños or use less buffalo sauce. Feel free to add other vegetables for added nutrition.
