- 3/4 cup eggnog
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans or walnuts (optional)
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
- 1 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the flour, granulated sugar, baking powder, salt, nutmeg, and cinnamon. Mix well.
- In another bowl, whisk together the eggnog, vegetable oil, eggs, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- If adding nuts, fold in the chopped pecans or walnuts.
- Pour the batter into the prepared loaf pan.
- For the crumb topping, mix the brown sugar, oats, and cubed butter until crumbly.
- Sprinkle the crumb topping over the batter evenly.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve once cooled.
