Description

A delightful salad featuring sweet figs, creamy goat cheese, and crispy bacon, balanced with a tangy dressing.


Ingredients

  • 3 slices of bacon, diced and cooked
  • 2 cups baby arugula
  • 2 cups mixed greens
  • 5 fresh figs, cut into 1/4ths
  • 2 oz goat cheese
  • 2 tbsp salted pistachios
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp chives, finely diced
  • 1/4 cup good quality olive oil
  • 2 tbsp good quality balsamic vinegar
  • 1 tbsp maple syrup
  • 1 garlic clove, crushed
  • 1/4 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, crushed garlic, dried thyme, salt, and pepper until well combined. Adjust the seasoning to taste if needed.
  2. Assemble the Salad: In a large bowl, combine the baby arugula and mixed greens. Toss in the bacon, figs, goat cheese, pistachios, red onion, and chives. Drizzle the dressing over the salad right before serving and toss gently to coat all the ingredients evenly.
