Description

Classic old-fashioned pancakes that are fluffy and perfect for breakfast.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.
  3. Pour the wet mixture into the dry ingredients. Gently stir until just combined. Do not overmix; a few lumps are fine.
  4. Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter. Pour about 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface and the edges look set, about 2 minutes. Flip and cook for another 1–2 minutes until golden brown.
  6. Stack and serve with butter, maple syrup, or your favorite toppings.

Notes

Keep the pancakes warm in a low oven while you cook the rest. You can substitute whole wheat flour for a healthier option.
