Ingredients

- 1 cup buttermilk

Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix together buttermilk, egg, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined; some lumps are okay.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour batter onto the skillet (about 1/4 cup for each pancake) and cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
Do not overmix the batter for fluffy pancakes. Letting the batter rest and using fresh leavening agents will yield better results.
