Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix together buttermilk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; some lumps are okay.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour batter onto the skillet (about 1/4 cup for each pancake) and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.

Notes

Do not overmix the batter for fluffy pancakes. Letting the batter rest and using fresh leavening agents will yield better results.
