Description

Deliciously light and airy pancakes that are perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons butter, melted
  • Additional butter or oil for the pan

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, beat the milk and egg together, then mix in the melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if there are some lumps).
  4. Heat a non-stick skillet or griddle over medium heat and grease with butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
  7. Keep pancakes warm in a low oven while you cook the remaining batter.
  8. Serve with your favorite toppings like syrup, fruit, or whipped cream.

Notes

Use fresh baking powder for fluffiest results and don’t overmix the batter.
