Delicious, fluffy pancakes that are quick to make, perfect for busy mornings or leisurely brunches.
Ingredients

- 2 cups / 300g all-purpose flour
- 4 tsp baking powder
- 1/4 cup / 55g white sugar
- Pinch of salt
- 1 egg
- 1 3/4 cups / 435 ml milk
- 1 tsp vanilla extract (optional)
- 4 tsp butter for cooking
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- Add the egg, milk, and vanilla extract (if using). Whisk just until smooth.
- Heat a non-stick skillet over medium to medium-high heat.
- Melt 1/2 tsp of butter in the pan and wipe most of it off with a paper towel.
- Pour about 1/4 cup of batter into the pan, swirling gently to spread into a circle.
- Cook until bubbles appear on the surface, then flip and cook for an additional 30 seconds or until golden brown.
- Repeat, re-buttering the pan every 2–3 pancakes as necessary.
- Keep cooked pancakes warm in a low oven until serving.
Notes
Make sure not to overmix the batter to keep pancakes fluffy.
