- 1 1/2 cups gingersnap crumbs
- 1/2 cup unsalted butter, melted
- 1 (15 oz) can pumpkin puree
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp pumpkin spice

- 1 cup whipped cream (for topping)
- 1 tbsp maple syrup
- 1/2 tsp ground cinnamon
Instructions
- In a bowl, mix gingersnap crumbs with melted butter until combined. Press into the bottom of a pie dish to form the crust. Chill.
- In another bowl, beat the pumpkin puree, powdered sugar, pumpkin spice, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold into the pumpkin mixture until combined.
- Pour the pumpkin mousse into the prepared crust and spread evenly.
- For the topping, beat the whipped cream with maple syrup and cinnamon until soft peaks form, then spread over the mousse.
- Chill for at least 4 hours before serving.
