Ingredients

  • 1 1/2 cups gingersnap crumbs
  • 1/2 cup unsalted butter, melted
  • 1 (15 oz) can pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp pumpkin spice
  • 1 tsp vanilla extract
  • 1 cup whipped cream (for topping)
  • 1 tbsp maple syrup
  • 1/2 tsp ground cinnamon

Instructions

  1. In a bowl, mix gingersnap crumbs with melted butter until combined. Press into the bottom of a pie dish to form the crust. Chill.
  2. In another bowl, beat the pumpkin puree, powdered sugar, pumpkin spice, and vanilla until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold into the pumpkin mixture until combined.
  4. Pour the pumpkin mousse into the prepared crust and spread evenly.
  5. For the topping, beat the whipped cream with maple syrup and cinnamon until soft peaks form, then spread over the mousse.
  6. Chill for at least 4 hours before serving.
