Description

A delicious twist on classic meatloaf with caramelized onions and French onion soup mix, perfect for family dinners.


Ingredients

  • 1/2 lb ground pork
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 packet French onion soup mix
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook for 10-12 minutes until caramelized. Add minced garlic in the last minute, then remove from heat and let cool.
  2. Preheat your oven to 350°F (175°C). In a large bowl, mix ground beef, ground pork, breadcrumbs, milk, egg, French onion soup mix, Worcestershire sauce, salt, pepper, and cooled onion mixture until combined.
  3. Transfer meat mixture into a loaf pan, shape into a loaf, and bake for 50-60 minutes until it reaches an internal temperature of 160°F (71°C).
  4. Whisk together ketchup, Dijon mustard, brown sugar, soy sauce, and Worcestershire sauce for the glaze. After 40 minutes of baking, spread the glaze over the meatloaf and return to the oven for an additional 10-15 minutes until bubbly.
  5. Let the meatloaf rest for 10 minutes before slicing and serve with sides like mashed potatoes or green beans.

Notes

Let the onions caramelize well for deeper flavors. For a spicier kick, add red pepper flakes. For a healthier version, use ground turkey instead of beef and pork.
