Description

French Onion Potatoes are a delightful dish combining the comforting flavors of French onion soup with tender, roasted potatoes, topped with cheesy goodness.


Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 packet French onion soup mix
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish to prevent sticking.
  2. In a large bowl, toss the halved potatoes with olive oil and the French onion soup mix until each potato is well coated.
  3. Spread the potatoes in the greased baking dish, cut side up, and roast in the preheated oven for 35–40 minutes, until tender and golden brown.
  4. Remove from the oven and sprinkle mozzarella and Gruyère cheese over the top. Return to the oven for an additional 5–7 minutes until the cheese is bubbling and melted.
  5. Garnish with chopped parsley and serve hot. For extra flavor, broil for 2–3 minutes until cheese is golden brown.

Notes

Feel free to experiment with different cheeses or add fresh minced garlic for enhanced flavor. Ensure even coating of potatoes for best results.
