Ingredients

  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy.
  2. Add the chopped onion and cook until translucent.
  3. Add the diced potatoes and corn kernels, stirring to combine.
  4. Pour in the broth and bring to a boil. Lower the heat and let it simmer until the potatoes are tender.
  5. Stir in the heavy cream and season with salt and pepper.
