Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy.
- Add the chopped onion and cook until translucent.
- Add the diced potatoes and corn kernels, stirring to combine.
- Pour in the broth and bring to a boil. Lower the heat and let it simmer until the potatoes are tender.
- Stir in the heavy cream and season with salt and pepper.
- Use an immersion blender to puree part of the soup for a creamier texture, if desired.
- Serve hot, garnished with fresh herbs.
Notes
For the best flavor, use fresh corn. This chowder can be made vegetarian by omitting the bacon and using vegetable broth.
