- 4 ripe nectarines, diced
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- Cream together the butter and sugar until light and fluffy.
- Beat in the vanilla extract.
- Mix together the flour, oats, baking powder, and salt in another bowl. Gradually add to the butter mixture until just combined.
- Fold in the diced nectarines.
- Spread the batter into the prepared pan.
- Bake for 25-30 minutes or until golden and a toothpick comes out clean.
- Allow to cool before serving.
Notes
Use ripe but firm nectarines to prevent the batter from becoming too wet. Store in an airtight container at room temperature for up to 2 days.
