Description

Ingredients

  • 1.5 pounds Beef stew meat (cut into bite-sized pieces)
  • 1 pound Baby potatoes (halved)
  • 4 tablespoons Unsalted butter (melted)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt (or to taste)
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Gather all ingredients; cut the beef into bite-sized pieces and halve the baby potatoes.
  2. Optional: Parboil the baby potatoes for a few minutes to soften them slightly.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef bites until browned on all sides.
  4. In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create garlic butter sauce.
  5. In the slow cooker, place halved potatoes and seared beef, then pour garlic butter sauce over top and add beef broth.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
  7. Let dish rest for about 10 minutes before serving.

Notes

Use high-quality beef stew meat for better tenderness. You can also add other vegetables for more nutrition.
