- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup (1 stick) unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped parsley (optional, for garnish)
- 1/2 cup chicken broth
Instructions
- Toss the chicken, quartered potatoes, and carrots into the slow cooker, mixing well at the bottom.
- In a separate bowl, combine melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth, stirring until evenly distributed.
- Pour the garlic butter mixture over the ingredients in the slow cooker and gently stir to coat evenly.
- Cover the slow cooker and set it to cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Once cooked through and tender, garnish with chopped parsley if desired and serve.
Notes
For extra moisture, use chicken thighs instead of breasts. Don’t skip the cooking spray for easy cleanup.
