- 8 oz baby bella mushrooms, sliced
- 1 cup orzo, uncooked
- 2 cups chicken broth
- 5 cloves garlic, minced
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon salt
- 5 oz fresh spinach
- ½ cup heavy cream
- ¼ teaspoon red pepper flakes
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced baby bella mushrooms and cook until golden brown and tender, about 5 minutes.
- Remove half of the mushrooms and set them aside for later.
- Add the uncooked orzo, chicken broth, minced garlic, Italian seasoning, paprika, and salt to the skillet. Stir well to combine.
- Simmer for 5 to 10 minutes, stirring occasionally, until the orzo is almost tender.
- Add the fresh spinach to the pan and cook until wilted, about 2 minutes.
- Stir in the heavy cream and reserved mushrooms, heating through on low until everything is mixed and warmed.
- Serve hot, topped with red pepper flakes and optionally grated Parmesan cheese.
