Description
Creamy, cheesy, and garlicky — this Garlic Parmesan Chicken and Rice is made effortlessly in your slow cooker. A one-pot comfort food classic!
Ingredients
4 to 6 boneless skinless chicken breasts (about 2 lbs)
2 (10.5 oz) cans Unsalted Cream of Chicken Soup
1 package Lipton Savory Herb with Garlic Soup & Dip Mix
1¾ cups milk
1 cup regular long-grain white rice (rinsed)
¼ cup grated Parmesan cheese
Salt and pepper to taste
Instructions
1. Spray slow cooker with cooking spray.
2. Place chicken breasts in bottom of slow cooker.
3. In a bowl, mix together cream of chicken soup, garlic soup mix, milk, and rinsed rice. Season with salt and pepper.
4. Pour rice mixture over chicken. Sprinkle Parmesan on top.
5. Cover and cook on HIGH for 3–4 hours, until chicken is tender and rice is cooked.
6. Remove chicken, shred or chop, and return to slow cooker.
7. Stir to combine. Add a splash of broth or milk if too thick.
8. Serve warm, garnished with extra Parmesan or parsley if desired.
Notes
Rinse rice to prevent clumping.
Use long-grain white rice only. Brown rice needs more liquid and time.
Add frozen veggies or steamed broccoli for a full meal.
Leftovers reheat well with a splash of milk or broth.
