Description

Crispy Garlic Parmesan Sweet Potato Wedges that make for a delicious and healthy side dish, perfect for any meal.


Ingredients

  • 3 medium or 2 large sweet potatoes
  • 3 tbsp extra virgin olive oil
  • 45 cloves fresh garlic, minced
  • 1/2 cup Parmesan cheese, grated, divided
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper, freshly ground
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. Scrub the sweet potatoes clean and pat them dry. Slice each sweet potato in half lengthwise, then cut each half into 2-3 long spears. Cut spears crosswise into 1/2 to 3/4 inch thick wedges.
  3. (Optional) For extra crispiness, soak the wedges in cold water for 20-30 minutes, then drain and pat dry.
  4. In a mixing bowl, combine minced garlic and olive oil.
  5. In a separate bowl, whisk together smoked paprika, garlic powder, onion powder, dried oregano, red pepper flakes, sea salt, and black pepper.
  6. Add the sweet potato wedges to the garlic olive oil mixture and toss to coat.
  7. Sprinkle the spice mixture and 1/4 cup grated Parmesan cheese over the wedges and toss until well-coated.
  8. Spread the wedges in a single layer on the baking sheets.
  9. Roast in the oven for 15 minutes, flip each wedge, and roast for another 10-15 minutes until tender and brown.
  10. Sprinkle the remaining 1/4 cup Parmesan evenly over the wedges and return to the oven for a final 5-7 minutes until golden brown.
  11. Transfer to a serving platter, garnish with parsley, and serve immediately.

Notes

For extra flavor, try adding chili powder or cumin. Soaking the wedges enhances crunchiness but can be skipped if short on time.
