Description

A delightful turkey recipe enhanced with garlic and fresh herbs, perfect for the holiday feast.


Ingredients

  • 1 turkey (12 to 18 lb, fully thawed)
  • 1 onion, peeled and cut into quarters
  • 1 lemon, cut into quarters
  • 1 to 2 sprigs fresh rosemary
  • 1 to 2 sprigs fresh thyme
  • 1 to 2 sprigs fresh sage
  • Kosher salt, as needed
  • Fresh ground black pepper, as needed
  • 3/4 cup unsalted butter, softened
  • 6 garlic cloves, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 onion, peeled and quartered
  • 3 ribs celery, roughly chopped
  • 2 carrots, roughly chopped

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Take the turkey and remove the giblets. Pat the turkey dry with paper towels.
  3. Season the cavity of the turkey with kosher salt and pepper. Stuff the cavity with the quartered onion, lemon, rosemary, thyme, and sage.
  4. In a bowl, mix the softened butter, minced garlic, chopped rosemary, chopped thyme, kosher salt, and black pepper.
  5. Carefully lift the skin of the turkey and spread the garlic butter mixture evenly under the skin.
  6. Tie the legs of the turkey together with kitchen twine and tuck the wing tips under the turkey.
  7. Place the turkey on a roasting pan. Arrange the remaining onion, celery, and carrots around the turkey in the pan.
  8. Roast the turkey in the oven, basting occasionally with the juices from the bottom of the pan. Cook until the internal temperature reaches 165°F (74°C), about 2 to 3 hours depending on the size.
  9. Let the turkey rest for at least 20 minutes before carving.

Notes

For best flavor, season the turkey the night before and refrigerate overnight.
