- 1 turkey (12 to 18 lb, fully thawed)
- 1 onion, peeled and cut into quarters
- 1 lemon, cut into quarters
- 1 to 2 sprigs fresh rosemary
- 1 to 2 sprigs fresh thyme
- 1 to 2 sprigs fresh sage
- Kosher salt, as needed
- Fresh ground black pepper, as needed
- 3/4 cup unsalted butter, softened
- 6 garlic cloves, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 onion, peeled and quartered
- 3 ribs celery, roughly chopped
- 2 carrots, roughly chopped
Instructions
- Preheat your oven to 325°F (163°C).
- Take the turkey and remove the giblets. Pat the turkey dry with paper towels.
- Season the cavity of the turkey with kosher salt and pepper. Stuff the cavity with the quartered onion, lemon, rosemary, thyme, and sage.
- In a bowl, mix the softened butter, minced garlic, chopped rosemary, chopped thyme, kosher salt, and black pepper.
- Carefully lift the skin of the turkey and spread the garlic butter mixture evenly under the skin.
- Tie the legs of the turkey together with kitchen twine and tuck the wing tips under the turkey.
- Place the turkey on a roasting pan. Arrange the remaining onion, celery, and carrots around the turkey in the pan.
- Roast the turkey in the oven, basting occasionally with the juices from the bottom of the pan. Cook until the internal temperature reaches 165°F (74°C), about 2 to 3 hours depending on the size.
- Let the turkey rest for at least 20 minutes before carving.
Notes
For best flavor, season the turkey the night before and refrigerate overnight.
