- 1 cup Brown or Green Lentils
- 1 cup Long-Grain Rice
- 4 cloves Garlic, minced
- 1 small Onion, chopped
- 3 cups Vegetable Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- ½ teaspoon Turmeric
- to taste Salt
- to taste Black Pepper
- to taste Fresh Parsley or Cilantro, chopped
- to taste Lemon Wedges
- to taste Red Chili Flakes
Instructions
- Heat olive oil over medium heat in a large pan, add onion and cook until soft (3-4 minutes).
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add lentils and rice, stirring to combine with onions and garlic.
- Add cumin, paprika, turmeric, salt, and black pepper; mix well.
- Pour in vegetable broth and bring to a gentle boil.
- Reduce heat to low, cover, and let simmer for 25-30 minutes until lentils and rice are cooked.
- Remove from heat, fluff with a fork, and adjust seasoning. Serve warm, garnished with parsley or cilantro and lemon juice, with red chili flakes for a kick.
