Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 2 large eggs
  • 1 cup molasses
  • 1 cup hot water
  • 1/4 cup buttermilk
  • 4 cups powdered sugar
  • 1/4 cup molasses (for frosting)
  • 2 teaspoons ground cinnamon (for frosting)
  • 1/4 cup milk, or more as needed
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and dark brown sugar until light and fluffy.
  4. Beat in the eggs one at a time until well incorporated.
  5. Gradually add the molasses, blending until smooth.
  6. Alternate adding the dry ingredients with hot water and buttermilk, starting and ending with dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30 to 35 minutes or until a skewer inserted comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  10. For the frosting, cream the softened butter until smooth. Gradually add powdered sugar until smooth. Stir in molasses and cinnamon, and add milk until desired consistency is reached.
  11. Once the cake is cool, spread the frosting evenly over the top.
  12. Decorate as desired and slice into squares to serve.

Notes

Ensure all ingredients are at room temperature for best results. Avoid overmixing to keep the cake light and fluffy.
