Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish
  • Cherry tomatoes, halved (optional)
  • Black olives, pitted and sliced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper.
  3. Place the cod fillets in a baking dish and brush the lemon-garlic mixture over them.
  4. If using, scatter cherry tomatoes and olives around the cod.
