A creamy and cheesy potato dish, perfect for family gatherings or a cozy night in.

- 4 tablespoons softened unsalted butter (divided)
- 3 pounds russet potatoes (peeled)
- 1 cup heavy cream
- 1/2 cup shredded white cheddar cheese
- 6 tablespoons grated Parmesan (divided)
- 3 garlic cloves (minced)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375˚F. Grease a baking dish with 2 tablespoons of butter.
- Very thinly slice the potatoes, using a mandolin if available.
- In a large mixing bowl, combine the heavy cream, shredded cheddar, 4 tablespoons of Parmesan, and minced garlic.
- Add the sliced potatoes to the bowl and toss until coated. Season generously with salt and pepper, then toss again.
- Line the sliced potatoes in the baking dish, keeping them upright.
- Pour the excess cream mixture over the potatoes and season lightly with salt and pepper.
- Dot the top with the remaining 2 tablespoons of butter.
- Cover the dish with foil and bake for 35 to 40 minutes.
- Uncover and sprinkle with the remaining Parmesan. Bake for an additional 25 to 30 minutes or until fork-tender.
- Broil on high for 1 minute until the top is browned. Let cool for 10 minutes before serving.
Notes
Use a mandolin for even slices and feel free to experiment with different cheeses. Add cooked bacon or sautéed onions for extra flavor.
