Description

A creamy and cheesy potato dish, perfect for family gatherings or a cozy night in.


Ingredients

Scale
  • 4 tablespoons softened unsalted butter (divided)
  • 3 pounds russet potatoes (peeled)
  • 1 cup heavy cream
  • 1/2 cup shredded white cheddar cheese
  • 6 tablespoons grated Parmesan (divided)
  • 3 garlic cloves (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375˚F. Grease a baking dish with 2 tablespoons of butter.
  2. Very thinly slice the potatoes, using a mandolin if available.
  3. In a large mixing bowl, combine the heavy cream, shredded cheddar, 4 tablespoons of Parmesan, and minced garlic.
  4. Add the sliced potatoes to the bowl and toss until coated. Season generously with salt and pepper, then toss again.
  5. Line the sliced potatoes in the baking dish, keeping them upright.
  6. Pour the excess cream mixture over the potatoes and season lightly with salt and pepper.
  7. Dot the top with the remaining 2 tablespoons of butter.
  8. Cover the dish with foil and bake for 35 to 40 minutes.
  9. Uncover and sprinkle with the remaining Parmesan. Bake for an additional 25 to 30 minutes or until fork-tender.
  10. Broil on high for 1 minute until the top is browned. Let cool for 10 minutes before serving.

Notes

Use a mandolin for even slices and feel free to experiment with different cheeses. Add cooked bacon or sautéed onions for extra flavor.
