- 2 Chicken breasts
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 2 tablespoons Lemon juice
- Salt, to taste
- Pepper, to taste
- 1 Cucumber, chopped
- 2 Tomatoes, chopped
- 1 Red onion, chopped
- 1 Bell pepper, chopped
- 1/2 cup Feta cheese, crumbled
- For Tzatziki Sauce:
- 1 cup Yogurt
- 1 Cucumber, grated
- 2 cloves Garlic, minced
- 1 tablespoon Dill
- 2 tablespoons Lemon juice
Instructions
- Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or bake the marinated chicken until fully cooked, about 6-7 minutes per side.
- While the chicken is cooking, chop the veggies (cucumber, tomatoes, red onion, bell peppers) and prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, dill, and lemon juice.
- Once the chicken is cooked, slice it into strips.
- Assemble the bowls by placing a scoop of rice or quinoa on the bottom, topped with grilled chicken, fresh veggies, crumbled feta, and a generous dollop of tzatziki sauce.
- Serve and enjoy!
