Description

Delightful Greek chicken bowls packed with chicken, fresh vegetables, and creamy tzatziki sauce. A healthy meal prep choice bursting with Mediterranean flavors.


Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1 Red onion, chopped
  • 1 Bell pepper, chopped
  • 1/2 cup Feta cheese, crumbled
  • For Tzatziki Sauce:
  • 1 cup Yogurt
  • 1 Cucumber, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Dill
  • 2 tablespoons Lemon juice

Instructions

  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the marinated chicken until fully cooked, about 6-7 minutes per side.
  3. While the chicken is cooking, chop the veggies (cucumber, tomatoes, red onion, bell peppers) and prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, dill, and lemon juice.
  4. Once the chicken is cooked, slice it into strips.
  5. Assemble the bowls by placing a scoop of rice or quinoa on the bottom, topped with grilled chicken, fresh veggies, crumbled feta, and a generous dollop of tzatziki sauce.
  6. Serve and enjoy!

Notes
