Description

A delightful blend of marinated grilled chicken, fresh vegetables, and zesty tzatziki sauce, perfect for lunch or dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/4 cup olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. Marinate the chicken breasts in olive oil, oregano, salt, and pepper for at least 30 minutes.
  2. Grill the marinated chicken on medium heat for 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest before slicing.
  3. Layer cooked rice or quinoa in a bowl or meal prep container as the base.
  4. Add sliced grilled chicken on top of the rice or quinoa.
  5. Arrange halved cherry tomatoes, diced cucumber, thinly sliced red onion, diced bell pepper, and sliced olives around the chicken.
  6. Sprinkle crumbled feta cheese over the top and drizzle with tzatziki sauce. Serve immediately.

Notes

For best flavor, marinate chicken longer if possible and use fresh vegetables.
