- 1/2 cup feta cheese, crumbled

- 1 cup brown rice or quinoa
- 1 cup tzatziki sauce
Instructions
- Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until fully cooked, then slice.
- Prepare the brown rice or quinoa according to package instructions.
- Chop the cucumber, tomato, and red onion.
- In bowls, layer the rice or quinoa, fresh veggies, sliced chicken, feta cheese, and olives.
- Drizzle with homemade tzatziki sauce before serving.
