  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the potato wedges with olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potato wedges on a baking sheet in a single layer to ensure they roast evenly.
  4. Roast in the oven for about 30-35 minutes, turning the potatoes halfway through, until they are golden brown and crispy on the outside.
