Description

A homemade version of the classic Green Bean Casserole featuring fresh green beans, creamy sauce, and crispy shallots.


Ingredients

Scale
  • 3 large shallots, peeled and very thinly sliced into rings
  • 1/4 cup flour
  • 1/4 tsp salt
  • Vegetable oil for frying
  • 1 1/2 lbs green beans, trimmed
  • 2 cups half and half, or cream
  • 1/2 ounce dried mushrooms (Shitake)
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1/3 cup dry sherry (or substitute with broth)
  • 1 cup shredded Gruyère cheese, divided
  • Salt and freshly cracked black pepper to taste
  • Dash of freshly grated nutmeg, or more to taste

Instructions

  1. In a pan, heat vegetable oil over medium-high heat. Toss the sliced shallots in a mixture of flour and salt, making sure they’re coated evenly. Fry the shallots until golden brown and crispy, about 5-7 minutes, then drain on a paper towel.
  2. In a large pot of salted boiling water, blanch the trimmed green beans for 3-4 minutes until tender but vibrant. Drain and immerse in ice water.
  3. In another saucepan, melt the butter over medium heat. Add dried mushrooms and toast slightly. Stir in 3 tablespoons of flour to make a roux, and gradually whisk in the half and half (or cream), bringing to a simmer until thickened. Stir in dry sherry (or broth), half of the Gruyère cheese, salt, black pepper, and a dash of nutmeg.
  4. In a mixing bowl, combine the blanched green beans and creamy sauce, stirring until well coated. Pour into a greased casserole dish, top with remaining Gruyère cheese and crispy shallots.
  5. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until the top is golden and bubbly. Cool for a few minutes before serving.

Notes

Use fresh ingredients for the best flavor. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
