Description

A summertime favorite that combines juicy chicken with a rich, flavorful marinade, perfect for backyard barbecues.


Ingredients

  • 1 and 3/4 lbs chicken tenderloins or boneless skinless chicken breasts
  • 1/4 cup vegetable oil
  • 3 cloves garlic, minced
  • 1 and 1/4 teaspoons salt
  • 1 tablespoon packed light brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • About 1 cup store-bought barbecue sauce or homemade BBQ sauce

Instructions

  1. Use a meat mallet to pound boneless skinless chicken breasts to an even thickness of about 1/2 inch, if using.
  2. Whisk together the vegetable oil, minced garlic, salt, brown sugar, smoked paprika, ground cumin, chili powder, and cayenne pepper in a large mixing bowl.
  3. Add the chicken to the bowl, and using tongs, toss until every piece of chicken is evenly coated with the marinade.
  4. Cover the bowl and place it in the refrigerator. Allow the chicken to marinate for at least 6 hours, or ideally overnight.
  5. Preheat your grill to high heat and oil the grates to prevent sticking.
  6. Grill the chicken, covered, for about 2 to 3 minutes on one side. Flip and brush with barbecue sauce.
  7. Cook for another 2 to 3 minutes, ensuring that chicken tenderloins cook faster than chicken breasts.
  8. Transfer the chicken to a serving platter and serve with the remaining barbecue sauce on the side.

Notes

For best flavor, marinate the chicken overnight. Keep a close eye on cooking time to avoid overcooking.
