- 1 and 3/4 lbs chicken tenderloins or boneless skinless chicken breasts
- 1/4 cup vegetable oil
- 3 cloves garlic, minced
- 1 and 1/4 teaspoons salt
- 1 tablespoon packed light brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/8 teaspoon cayenne pepper
- About 1 cup store-bought barbecue sauce or homemade BBQ sauce
Instructions
- Use a meat mallet to pound boneless skinless chicken breasts to an even thickness of about 1/2 inch, if using.
- Whisk together the vegetable oil, minced garlic, salt, brown sugar, smoked paprika, ground cumin, chili powder, and cayenne pepper in a large mixing bowl.
- Add the chicken to the bowl, and using tongs, toss until every piece of chicken is evenly coated with the marinade.
- Cover the bowl and place it in the refrigerator. Allow the chicken to marinate for at least 6 hours, or ideally overnight.
- Preheat your grill to high heat and oil the grates to prevent sticking.
- Grill the chicken, covered, for about 2 to 3 minutes on one side. Flip and brush with barbecue sauce.
- Cook for another 2 to 3 minutes, ensuring that chicken tenderloins cook faster than chicken breasts.
- Transfer the chicken to a serving platter and serve with the remaining barbecue sauce on the side.
Notes
For best flavor, marinate the chicken overnight. Keep a close eye on cooking time to avoid overcooking.
