Description
Quick and satisfying quesadillas filled with seasoned ground beef and gooey cheese wrapped in warm tortillas.
Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt & black pepper, to taste
- 1/4 cup water
- 8 flour tortillas (medium size)
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- 2 tablespoons butter or oil
Instructions
- In a skillet, cook ground beef and onion until the beef is browned. Drain any excess fat.
- Stir in garlic, chili powder, cumin, paprika, salt, pepper, and water. Simmer for 2–3 minutes until the mixture thickens.
- Heat a large skillet or griddle over medium heat. Butter one side of each tortilla.
- Place one tortilla, buttered side down, in the skillet. Sprinkle with cheese, spoon the beef mixture on top, then add more cheese. Top with another tortilla, buttered side up.
- Cook until golden brown, about 2–3 minutes per side, flipping carefully.
- Slice into wedges and serve hot with salsa, sour cream, or guacamole.
