Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach or kale

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5-7 minutes until softened.
  2. Stir in garlic, zucchini, and bell pepper; cook for another 3-4 minutes.
  3. Add diced tomatoes, vegetable broth, thyme, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 20-25 minutes until all vegetables are tender.
  5. Stir in spinach or kale and cook for an additional 2-3 minutes until wilted.
