Description

A nutritious meal bringing together lean protein, complex carbohydrates, and plenty of vitamins, perfect for meal prep or a quick dinner.


Ingredients

Scale
  • 2 chicken breasts
  • 2 sweet potatoes
  • 1 cup rice (brown or white)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Fresh greens (spinach or arugula) for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them in a bowl with olive oil, salt, pepper, paprika, and garlic powder. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
  3. While sweet potatoes are roasting, cook the rice according to package instructions.
  4. Season the chicken breasts with salt and pepper. In a skillet over medium heat, cook the chicken breasts until fully cooked and golden brown, about 6-7 minutes per side.
  5. Once everything is cooked, assemble the bowls by adding rice, roasted sweet potatoes, and sliced chicken. Top with fresh greens if using. Enjoy your nourishing meal!
