- 1 cup rolled oats
- 1 ripe banana
- 1 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Cooking spray or oil for the pan
Instructions
- In a blender, blend the rolled oats until they become a fine flour.
- Add the banana, applesauce, baking powder, cinnamon, vanilla extract, and salt to the blender and blend until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes on the other side.
- Serve warm with your favorite toppings.
Notes
Use ripe bananas for a sweeter taste. Consider adding nuts, or spices, or serving with yogurt for a nutritious twist.
